Chaga Milk Tea

Who doesn't love a classic pearl milk tea?   But did you know, you can also make a kick ass pearl tea with Chaga? All you need is a batch of properly brewed strong chaga.   Whole milk or cream.  And here is final secret ingredient...burnt sugar caramel.  


You will need 1/2 cup of white sugar, and carefully dissolve white sugar in just enough water...about 2 - 3 Tablespoon.  Heat the sugar mixture over medium high heat.  After a few minutes, the mixture will come to a furious boil.  Swirl the pan around to even out the mixture. Once the sugar mixture has started to caramelize, watch it carefully.  It takes just seconds for caramel to go from great to burnt.    You want the color to be a shade lighter than the color of dirt. 

Once it is this color, remove from heat, let cool slightly, and add your brewed chaga and milk.    How much brewed chaga and milk is up to you.   If you like a more creamy drink, go for 1/2 chaga and 1/2 milk.   If you like it a little less creamy, go for 1/3 milk to 2/3 brewed chaga.   That's it.   Stir until everything is dissolved.     You will need about 4 cups total of the chaga combined with milk for every 1/2 cup of sugar.    Add ice to taste.
